Happy St. Paddy’s Day!

EFM currently has three missionaries serving in Ireland right now! We are thankful for Kathi Perry, Molly Morton, and the Howell Family and each of their ministries! St. Patrick’s day is a holiday which has been adopted from Ireland and become quite popular here in America! We asked our missionaries to share some fun facts and things to do for this holiday! Enjoy!

Did you know?
  • St. Patrick’s Day is marked with parades, food, and games (much like our 4th of July).
  • The Irish do NOT pinch people who don’t wear green. They think that is a very weird tradition!
  • It’s actually “St. Paddy’s Day” not – “St. Patty’s Day”!
  • St. Patrick was a fierce advocate for those who were most vulnerable and abused in captivity. He has numerous memorable sayings written in his Confessions.

This recipe below is for Colcannon – you can serve it with or without bacon. Kathi Perry suggests laying some sausages on top of it. This is a very typical and simple St. Patrick’s Day meal.  Download the recipe here.

Colcannon Recipe With Bacon Easy Colcannon Recipe With Bacon

Colcannon is a traditional Irish dish of mashed potatoes with kale or cabbage. This easy colcannon recipe has the bonus of including bacon, and is on the table in about 30 minutes.

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Servings: 4 to 6

Ingredients

2 pounds russet potatoes, peeled and cut into cubes
1 cup milk or cream
5 tablespoons butter
3 cups chopped cabbage or kale
1/4 cup chopped green onions
6 slices bacon, cooked and crumbled

Directions

1. Cook the potatoes in boiling salted water until tender, about 20 minutes. Drain.
2. Add the milk or cream to the potatoes and mash. Set aside.
3. Melt the butter in another pot. Add the cabbage or kale and green onions and cook, stirring, about 5 minutes.
4. Add the vegetables and the bacon, if using, to the mashed potatoes. Mix well. Season with salt and pepper, to taste.
5. Serve with additional butter, if desired.
